It completely depends on the department. When I applied to the CHP and the LAPD the tests were almost identical, but when I applied to LASO and CoCo SO the tests were completely different. However, the primary focus of the test was your knowledge of the English language: spelling, reading comprehension, vocabulary, sentence structure. They'd have a section where you'd have to choose the correctly spelled word, a section where you'd have to read anywhere from two lines to one page and correctly answer the questions (reading comprehension), a page where words would be taken out and blank spots would be put in (like so: _ _ _ _ _ and you had to fill in the correct word, this was vocabulary section), and the final was reading two sentence and choosing the one that was composed correctly (grammar/sentence structure). Like DeputyAdam said, it depends on the agency. I know our agency has a physical agility test thats a bitch! It is in fact timed and if you fail you are not ushered on to the next phase of the testing. Our exams are timed as far as the written test it concerned. I dont knwo about other agencies, however ours is pretty rigorous. Helps weed out the ...unwanted. Good Luck to you.

On all the tests that I took there weren't any math portions. As well as what cowboy said, the written tests that I've taken have always been timed. Thirty minutes for this portion, fifteen for this one, etc. Also, the physical agility for the department that I was just hired on for is as follows:
-500m in 2min or less
-6ft solid wall in 15sec or less
-6ft chain wall in 15 sec or less
-dummy drag 30ft in 12sec or less
-obtacle course in 30sec or less

Don't forget to prepare for the physical stuff as well as the mental stuff.
